Ransom Malted Old Tom Gin

Ransom Old Tom Gin, photo credit Kim Nguyen, Portland Monthly May 20, 2009 - If you're looking for a spirit with an Old World/New World twist, check out winemaker/distiller Tad Seestadt's new release (a collaboration with cocktail historian David Wondrich), the Ransom Malted Old Tom Gin.

We're currently serving Batch No. 001 of Tad Seestedt's take on the Old Tom style. The base wort uses malted barley to impart a subtle malty sweetness, and the final distillation is run through an alembic pot-still for maximum aromatics. Then the whole batch rests in neutral Pinot Noir barrels for texture and color.

Stop at the bar to try it in our Old Tom Collins, or order up Benjamin's delicious new recipe:

Fresh & Clean
  • 2 oz. Ransom Old Tom Gin
  • .5 oz. Aperol Liqueur
  • .75 oz. fresh squeezed lime juice
  • .75 oz. simple syrup
  • dash Peychaud's Bitters
Build ingredients in an ice-filled shaker, stir vigorously until very chilly. Strain into a chilled cocktail glass, and enjoy!

Spring Food Menu May 8, 2009 - Now that our PATIO is open, Chef Marianne updated our seasonal American plate selections - delicious for nibbling, dining and sharing!

We've also added some new artisanal cheese and housemade charcuterie to our already fantastic list - stop in to check these out indoors or al fresco!
