In 2016, we harvested half a ton of Grenache Noir for our first ever sparkling wine. We chose Clone 2 Grenache from the Santa Barbara Highlands vineyard; whose rows began A Tribute to Grace's journey in 2007. Harvested September 8th, 2016 (moon in Sagittarius). Direct pressed, fermented in stainless, this wine went through secondary fermentation in bottle. En Tirage for 11 months, disgorged March 8th, 2019. Non-dosage, bottled Brut Nature. Dry and crisp, with good acidity and citrus fruit flavors.
