Blend of 51% Grenache, 34% Counoise and 15% Syrah from sandy soils southeast of Cairanne. The terroir was chosen for the delicate tannins it produces. The grapes are harvested slightly early to conserve a maximum of acidity present at the very beginning of a harvest and to find freshness in years of drought. This is largely why we have chosen to incorporate Counoise to the blend, an indigenous varietal worked little in our cellar but chosen for its fruit and low yields. It also blends excellently with Grenache and Syrah. The wine was fermented semi-carbonically in whole-clusters for 50% of the grapes at very low temperatures for six days. We kept racking the juices at forming at the bottom to encourage intra-cellular fermentation in order to have a pure juice, delicate and only lightly extracted. The wine was vinified naturally with no intervention. Each varietal fermented and aged in concrete vats separately for eight months before being blended. One gram of S02 was added per hectoliter at bottling.
