Paulo de Tebas 2018 Eremitas BlancIn Fine Spirits
The grapes for this wine come from a vineyard situated at 500 meters with deep soils. The fruit macerates on skins for a few hours in a granite basin. After pressing, the wine is racked into concrete vats where it ferments spontaneously without temperature control. Lovely, skin-contact white with big salinity and minerality, and flavors of fresh-bakred bread and citrus fruits. Pair with light fish dishes, octopus, or shellfish.
